Over the years the key component of this blend has moved from Mauzac to Chardonnay, in itself entirely logical, as Limoux is especially well-known for the quality of its high-altitude Chardonnay.
With Vermentino adding aromatic complexity, and traces of Chenin Blanc and Mauzac for structure, this is a very attractive blend with a nose of orchard fruit and spice and palate fruit which strays, albeit elegantly, towards the more tropical end of the spectrum adding gravitas, and making this a fine food-wine as well as a satisfying aperitif.
